InstaPot Pesto Chicken

This is a super easy, quick, and delicious meal! I used 3 frozen chicken breasts and they cooked perfectly in 18 minutes. They were moist and had great flavor.

Ingredients
3 chicken breasts (frozen or thawed)
1 jar basil Pesto (I used a 6 oz jar, you can use more or less depending on preferences)
1/2 can chicken broth (can use 1/2 cup water instead)

Directions
1. Put your half can of chicken broth (or water) to the bottom it your InstaPot. I had my grate in the bottom so the chicken wasn’t sitting directly in the juices.
2.Place the chicken on the grate (can be placed directly in the broth if desired).
3.Spoon the Pesto onto the chicken breasts.
4.Put the lid on the InstaPot and make sure the pressure release valve is closed.
5.Push the chicken/meat button and cook for 18 minutes if chicken is frozen.
Cook 12 minutes if chicken is thawed.

This is a super quick and easy meal that I can throw together for dinner on nights I get off work late. To make it a full meal you could pair it with some frozen veggies or a pack of minute rice.
